Baked Flounder II

  • 1 lb Flounder Fillets
  • 1 cup Seasoned Bread Crumbs
  • 1/4 cup Grated Parmesan Romano Cheese
  • 1 tbsp Paprika
  • 3 tblsp Butter
  • 2 tblsp Lemon Juice
  • Cooking Spray (Pam)
  • Waxed Paper
  • Preheat Oven to 400 F.
  • In a one cup measuring cup, melt Butter with the Lemon Juice in a microwave oven.
  • In a medium sized mixing bowl, mix Bread Crumbs, Grated Cheese, and Paprika.
  • Tear off two sheets of Waxed Paper large enough so that each sheet can hold all the Filets. Arrange the Filets on one sheet of Waxed Paper. Blot the top side of the Filets dry with a Paper Towel. Transfer the Filets to the second sheet of Waxed Paper, dried side down. Blot the top side of the Filets dry.
  • Brush topside of Filets with the Lemon Butter. Sprinkle/dust the Filets with the Bread Crumb Grated Cheese Paprika mixture. Flip Filets over and repeat.
  • Spray Baking Sheet with Cooking Spray.
  • Arrange Filets on Baking Sheet.
  • Bake for 15 to 20 minutes or until Fish begins to flake.
