Ingredients
- 1 to 1-1/2 lb Lean Ground Beef
- 2 cups Elbow Macaroni or Tortini (Corkscrews)
- 1 (1 ounce) package dry Onion Soup mix (e.g. Liptons)
- 1 (28 ounce) can Whole Peeled Tomatoes undrained and chopped
- 2 cups Water
- 5 oz Baby Leaf Spinach, or Arugala
- 1 tsp Oregano
- 1/2 tsp Italian Seasoning
- 2 tbsp Minced Garlic
- 1/4 tsp (or more to taste) Crushed Red Pepper
- 1/3 cup Grated Parmesan Cheese
- 1/2 cup Shredded Mozzarella
Directions
- In a large skillet, over medium heat, brown the Ground Beef until crumbly and no pinks hows; drain.
- Stir in Onion Soup mix, Seasonings, Tomatoes and Water. Bring to a boil. Stir in Macaroni. Simmer covered, stirring occaisionally, for 2o minutes.
- Sprinkle in Parmesan Cheese, stir. Top with Mozzarella
