Baked Boneless Skinless Chicken Thighs

Ingredients
  • 2 lbs Boneless Skinless Chicken Thighs
  • 1 tbsp Garlic Salt
  • 2 tsp Smoked Paprika
  • 1 tsp Sugar
  • 1 tsp Coarse Ground Black Pepper
  • 1 tsp dried Thyme
  • 3/4 tsp Onion Powder
  • 1/8 tsp Cayenne Pepper (optional)
  • Extra Virgin Olive Oil
  • Cooking spray (PAM)
Preparation
  • In a small bowl, mix Garlic Salt, Smoked Paprika, Sugar, Black Pepper, Thyme, Onion Powder, and Cayenne.
  • In a gallon sized Zip Loc bag, place Chicken Thighs. Drizzle with EVOO. Seal shut. Shake, mix, squeeze until Thighs are coated with EVOO. Open bag and sprinkle in the Seasonings, then shake, mix, squeeze until Thighs are well coated. Marinate in refrigerator for 1/2 to 4 hours.
Directions
  • Preheat oven to 425F.
  • Using a 2 to 2-1/2 quart (9”x13”) baking dish, spray dish with cooking spray. Arrange Thighs.
  • Bake in preheated oven, uncovered for 20 minutes, flip and bake another 15 to 20 minutes, until Thighs are no longer pink in the center and juices run clear. (An instant read thermometer inserted into the Thighs should read at least 165F.)
Notes
  • Use about 2 or 3 tbsp of your favorite Chicken Spice Rub, or BBQ Rub instead of the seasonings listed above.
