INGREDIENTS:
- 1 lb Chicken Cutlets cut into small pieces
- 1 cp. Yellow Onions, diced
- 1 (10 oz.) Sliced Mushrooms
- 1 cp. White Wine or Dry Vermouth
- 1 (14 oz.) Can of Petite Diced Tomatoes
- 3 to 4 Cloves of Crushed Garlic
- 1 tsp. Italian Seasoning
- 1/4 tsp. Crushed Red Pepper
- 1 tsp. Garlic Salt
- Extra Virgin Olive Oil
- 1lb. Pasta – your choice
PREPARATION:
- Prepare Pasta, meanwhile…
- In a large skillet or wok, over medium high heat saute Mushrooms until they become tender
- Add Onions, continue to saute until onions are tende
- Add Chicken, continue to saute until Chicken is cooked (will have turned white)
- Add White Wine and bring to a boil
- Add Italian Seasoning, Crushed Red Pepper, Crushed Garlic, Garlic Salt and Diced Tomatoes
- Bring to a boil, reduce heat, cover and simmer 15 minutes
- Add Pasta, toss and serve
