Chicken White Wine and Mushrooms

This is true comfort food – rich and savory – you will love it!.

Ingredients

  • 1lb – Chicken Cutlets
  • 1/2 cup – Flour
  • 1 tblsp – Garlic Salt
  • 1 tsp – Coarse Ground Black Pepper
  • 4 to 6 oz – White Wine or Dry Vermouth
  • 1 can Chicken Broth
  • 8 oz sliced or coarsely chopped Mushrooms
  • 1/2 tsp – Italian Seasoning
  • 1 tsp – Capers
  • Extra Virgin Olive Oil
  • Butter

Preparation

  • Pre-heat 350 degreee oven
  • Mix Flour, Garlic Salt and Pepper
  • Cut Chicken Cutlets in half
  • Coat Chicken in Flour Mixture until well coated
  • Over medium high heat, in a large oven proof skillet,  brown Chicken pieces. Remove to a dish
  • Add Mushrooms to skillet and sauté about 5 minutes
  • To skillet add Chicken Broth, Wine/Vermouth, Italian Seasoning, 2 tblsp of the seasoned Flour, Capers bring to boil; add Chicken, bring to a boil
  • Place skillet in oven and bake 20 to 30 minutes
