Ingredients
- 1lb – Chicken Cutlets
- 1/2 cup – Flour
- 1 tblsp – Garlic Salt
- 1 tsp – Coarse Ground Black Pepper
- 4 to 6 oz – White Wine or Dry Vermouth
- 1 can Chicken Broth
- 8 oz sliced or coarsely chopped Mushrooms
- 1/2 tsp – Italian Seasoning
- 1 tsp – Capers
- Extra Virgin Olive Oil
- Butter
Preparation
- Pre-heat 350 degreee oven
- Mix Flour, Garlic Salt and Pepper
- Cut Chicken Cutlets in half
- Coat Chicken in Flour Mixture until well coated
- Over medium high heat, in a large oven proof skillet, brown Chicken pieces. Remove to a dish
- Add Mushrooms to skillet and sauté about 5 minutes
- To skillet add Chicken Broth, Wine/Vermouth, Italian Seasoning, 2 tblsp of the seasoned Flour, Capers bring to boil; add Chicken, bring to a boil
- Place skillet in oven and bake 20 to 30 minutes
