Chicken White Wine and Mushrooms

This is true comfort food – rich and savory – you will love it!.

Ingredients

  • 1lb – Chicken Cutlets
  • 1/4 cup – Flour
  • 1 tbl – Garlic Salt
  • 1 tsp -Coarse Ground Black Pepper
  • 4 to 6 oz – White Wine or Dry Vermouth
  • 1 can Chicken Broth
  • Sliced or coarsely diced Mushrooms
  • 1/2 tsp Porcini Mushroom Powder (this is optional – if you don’t have it don’t worry about it)
  • 1/2 tsp – Italian Seasoning
  • 1 tsp – Capers
  • Garlic Salt
  • Coarse Ground Black Pepper
  • Olive Oil
  • Butter

Preparation

  • Pre-heat 350 degreee oven
  • Mix Flour, Garlic Salt and Pepper
  • Cut Chicken Cutlets in half
  • Coat Chicken in Flour Mixture until well coated
  • In a 2 quart pot add Chicken Broth, Wine/Vermouth, Musroooms, Italian Seasoning, 1 tblsp Flour, Capers bring to boil and simmer
  • Meanwhile over medium high heat, in a Wok (or large skillet lightly brown Chicken pieces. Remove to casserole dish
  • Pour Broth / Mushrooms over chicken and bake for about 20 or 30 miuntes
