Ingredients
- 1 to 1.5 lbs – Atlantic Salmon fillet
- 3 or 4 – Cedar Planks
- Olive Oil
- Lemon Juice
- Sea Salt
- Garlic Powder
- Coarse Ground Black Pepper
Preparation
- Place Cedar Planks in a large pot; fill with water; place another pot on top of Planks to weight them down; soak 2 to 4 hours
- Set wet Planks on a baking tin; place in cold oven and pre-heat to 400°F
- Cut Salmon fillet into serving size pieces to fit Cedar Planks
- Oil both sides of Salmon pieces
- On top side of Salmon: sprinkle Lemon juice, then season with Sea Salt, Garlic Powder and Coarse Ground Pepper
- Remove heated Planks from oven; spread Olive Oil on top side of Planks; arrange Salmon pieces on Planks; return to oven
- Bake Fillets 15 to 20 minutes or until Salmon flakes easily with a fork
- Remove from oven; use spatula to lift Fillets from Planks
Procuring Cedar Planks
Your grocery store may carry Cedar Planks – ask for them at the Seafood counter. Or, buy them online – try Outdoor Gourmet. Or, make your own. Go to a Lumber Yard, ask for a 4 foot length of 1″ by 6″ ofuntreated Cedar board. Cut board into 4″ wide pieces.
Cleaning Cedar Planks
Use White Vinegar and Scrubbie to clean the Plank; rinse with water and let air dry. Or scrub with coarse Kosher Salt and Lemon Juice; rinse with water and let air dry. Discard if/when Planks develop off odor.
