Cod Italiano

  • Cod Fillet
  • 1 Medium Onion diced
  • 14 oz. Diced Tomatoes (Del Monte Petite Diced Tomaotes in Garlic and Olive Oil)
  • 1 tsp. Garlic Salt
  • 1/2 tsp. Italian Seasoning
  • 1/8 tsp. Crushed Red Pepper
  • 1/4 cp. Dry Vermouth or White Wine
  • Extra Virgin Olive Oil
  • In a large skillet saute Diced Onion in EVOO over medium high heat until tender
  • Add Dry Vermouth and continue to cook 2 or 3 minutes
  • Add Diced Tomatoes and Seasonings continue to cook about 10 minutes to thicken the Tomatoe Sauce
  • Add Cod Fillets and gently turn until coated with Sauce; cover skillet and cook about 5 minutes – until Cod flakes easily with a fork
  • Serve over bed of Brown Rice
