Ingredients
- Cod Fillet
- 1 Medium Onion diced
- 14 oz. Diced Tomatoes (Del Monte Petite Diced Tomaotes in Garlic and Olive Oil)
- 1 tsp. Garlic Salt
- 1/2 tsp. Italian Seasoning
- 1/8 tsp. Crushed Red Pepper
- 1/4 cp. Dry Vermouth or White Wine
- Extra Virgin Olive Oil
Preparation
- In a large skillet saute Diced Onion in EVOO over medium high heat until tender
- Add Dry Vermouth and continue to cook 2 or 3 minutes
- Add Diced Tomatoes and Seasonings continue to cook about 10 minutes to thicken the Tomatoe Sauce
- Add Cod Fillets and gently turn until coated with Sauce; cover skillet and cook about 5 minutes – until Cod flakes easily with a fork
- Serve over bed of Brown Rice
