Shrimp Broccoli Stir-fry
Ingredients
1 lb cleaned deveined raw Shrimp, defrosted
1 large Broccoli Crown, cut up
1 small Onion, diced
1/4 cup Coconut Aminos
1/4 cup Terriyaki Sauce
1/2 cup medium dry Sherry
1 tsp. Sugar
1 tsp. Garlic Powder
1 tsp Ground Ginger
1 tbsp minced Garlic
2 tbsp Cornstarch
1/2 tsp Crushed Red Pepper (optional)
Extra Virgin Olive Oil (or oil of your choice)

Marinade and Sauce Preparation
In a large bowl, mix Coconut Aminos, Teriyaki Sauce, Sherry, Sugar, Garlic Powder, Ground Ginger. Stir/whisk well. Then pour 1/2 cup of the mixture into a smaller bowl.
To the smaller bowl add the Cornstarch, minced Garlic and (optional) Crushed Red Pepper – this is the Sauce. Stir well and let stand.
Directions
Place defrosted Shrimp in the Marinade bowl and stand for 30 minutes.
Using a Wok or large Skillet, over medium-high heat add Oil, when hot stir-fry diced Onion until translucent (about 3 minutes). Add Broccoli, continue to stir-fry until tender crisp (about another 3 minutes).
Add Shrimp, stir-fry until the Shrimp turns opaque (about 3 minutes).
Remix the Sauce, then add to skillet and bring to a boil while stirring. (If Sauce becomes too thick, add 1/4 cup Water and stir and bring to boil).
