One Pan Italian Sausage Pasta

Ingredients
  • 1/2 lb Sweet Italian Sausage
  • 1 Yellow Onion, diced
  • 1-1/4 cups Orecchiette Pasta
  • 5 oz Baby Leaf Spinach, or Arugula
  • 1/2 cup Dry White Wine
  • 3 cups low-sodium Chicken Broth, divided , or as needed
  • Grated Parmesan Cheese
  • 2 tbsp Extra Virgin Olive Oil
  • 1 pat Butter
  • 1 pinch of Salt
Directions
  • Heat EVOO and Butter in large, deep skillet over medium high heat. Add Onion with a pinch of Salt; cook and stir until Onions are translucent and just begin to caramelize, 3 to 5 minutes . Stir in the Sausage; cook and stir until Sausage is crumbly and browned5 to 7 minutes.
  • Increase heat slightly; add Wine and 1 cup of Broth. Stir to deglaze the pan. Reduce heat to medium high.
  • Add Pasta; cook and stir; add more Broth in 1/2 cup increments when liquid is absorbed. Continue until Pasta is cooked, 12 to 15 minutes.
  • Add Spinach to the Sausage Pasta mixture and continue to stir until Spinach has wilted.
  • Turn off heat. Sprinkle on the grated Parmesan cheese and stir. Serve.
