One Pan Italian Sausage Pasta

Ingredients
1/2 lb Sweet Italian Sausage
1 Yellow Onion, diced
1-1/4 cups Orecchiette Pasta
5 oz Baby Leaf Spinach, or Arugula
1/2 cup Dry White Wine
3 cups low-sodium Chicken Broth, divided , or as needed
Grated Parmesan Cheese
2 tbsp Extra Virgin Olive Oil
1 pat Butter
1 pinch of Salt
Directions
Heat EVOO and Butter in large, deep skillet over medium high heat. Add Onion with a pinch of Salt; cook and stir until Onions are translucent and just begin to caramelize, 3 to 5 minutes . Stir in the Sausage; cook and stir until Sausage is crumbly and browned5 to 7 minutes.
Increase heat slightly; add Wine and 1 cup of Broth. Stir to deglaze the pan. Reduce heat to medium high.
Add Pasta; cook and stir; add more Broth in 1/2 cup increments when liquid is absorbed. Continue until Pasta is cooked, 12 to 15 minutes.
Add Spinach to the Sausage Pasta mixture and continue to stir until Spinach has wilted.
Turn off heat. Sprinkle on the grated Parmesan cheese and stir. Serve.
