Sausage Bell Pepper Potato Bake

Ingredients
  • 1 lb Italian Sausage links, cut into thirds
  • 2 cups Yukon Gold Potatoes, quartered
  • 1 large Red Bell Pepper, cut into strips
  • 1 large Green Bell Peppers, cut into strips
  • 2 Onions, sliced
  • 1/4 cup dry White Wine
  • 1/4  up Chicken Broth
  • 1 tsp Italian Seasoning
  • Extra Virgin Olive Oil
  • Garlic Salt and Ground Black Pepper to taste
Directions
  • Preheat oven to 400 F
  • In a large bowl add Potatoes, drizzle EVOO over the Potatoes and season with Garlic Salt and Pepper. Place Potatoes in a 9 X 13 inch baking dish and roast for 20 minutes.
  • In a large skillet over medium heat, add some EVOO and the Sausage; cook and stir the sausage until browned, 5 to 10 minutes. Transfer cooked Sausage to the baking dish.
  • Pour 1/4 cup of EVOO into skillet, add the Bell Peppers and Onions; cook and stir Bell Peppers and Onions until they begin to soften.
  • Transfer the Vegetables to baking dish. Pour Wine over Vegetables and Sausage, and sprinkle with Italian Seasoning, Garlic Salt and Black Pepper.
  • Gently stir Sausage, Potatoes and Vegetables together.
  • Bake in preheated oven until hot and bubbling, 20 to 25 minutes.
  • Serve.
