Sausage Bell Pepper Potato Bake
Ingredients
1 lb Italian Sausage links, cut into thirds
2 cups Yukon Gold Potatoes, quartered
1 large Red Bell Pepper, cut into strips
1 large Green Bell Peppers, cut into strips
2 Onions, sliced
1/4 cup dry White Wine
1/4 up Chicken Broth
1 tsp Italian Seasoning
Extra Virgin Olive Oil
Garlic Salt and Ground Black Pepper to taste
Directions
Preheat oven to 400 F
In a large bowl add Potatoes, drizzle EVOO over the Potatoes and season with Garlic Salt and Pepper. Place Potatoes in a 9 X 13 inch baking dish and roast for 20 minutes.
In a large skillet over medium heat, add some EVOO and the Sausage; cook and stir the sausage until browned, 5 to 10 minutes. Transfer cooked Sausage to the baking dish.
Pour 1/4 cup of EVOO into skillet, add the Bell Peppers and Onions; cook and stir Bell Peppers and Onions until they begin to soften.
Transfer the Vegetables to baking dish. Pour Wine over Vegetables and Sausage, and sprinkle with Italian Seasoning, Garlic Salt and Black Pepper.
Gently stir Sausage, Potatoes and Vegetables together.
Bake in preheated oven until hot and bubbling, 20 to 25 minutes.
