Cucumber Salad

  • 1 Cucumber
  • 1/4 cup Apple Cider Vinegar (or substitute White Wine Vinegar)
  • 1/8 cup Sugar
  • 1/4 tsp Salt
  • 1/4 tsp Onion Powder
  • 1/8 tsp Ground Black Pepper
  • 2 tbsp Extra Virgin Olive Oil
  • Peel off most of the Cucumber skin (leave a few thin strips).
  • Cut the Cuccumber into thin (1/8 inch) slices and place in serving bowl.
  • Using a small bowl mix the remaining ingredients until well blended. Pour contents over the Cucumber slices and stir until the slice are well coated. Place bowl in the refrigerator for 1 hour or more before serving
