Roasted Peewee Potatoes

  • Dutch Yellow Peewee Potatoes, sliced in half
  • Extra Virgin Olive Oil
  • Seasonings (actually your choice, Adobo Seasoning with Black Pepper works really well too)
    • Garlic Salt
    • Coarse Ground Black Pepper
    • Thyme (or Crushed Rosemary)
  • Cooking Spray (PAM)
  • Preheat oven to 425 F
  • In a large bowl, add sliced Peewee Potatoes, drizzle with EVOO, apply Seasonings, mix well and let set for 20 minutes or so
  • Spray a baking sheet with Cooking Spray (PAM)
  • Arrange Potatoes, in a single layer, skin side down
  • Bake / Roast for 10 to 15 minutes (May use a 400 F oven and bake for 30 minutes)
