Sauteed Shrimp Asparagus and Mushrooms
Ingredients
2 tbsp Butter, divided
1 lb Asparagus, cut into 2-inch pieces
2 cups sliced Mushrooms
1 small Onion, sliced
1 lb large Raw Shrimp, peeled and deveined
2 cloves Garlic, minced
1 tbsp Garlic Salt
1 tbsp Dried Parsley
1 tsp ground Black Pepper
1/4 tsp Crushed Red Pepper
1/2 cup Dry White Wine / Vermouth
3 tbsp Lemon Juice
Directions
Melt 1 tablespoon butter in a large skillet over medium heat. Add Asparagus, Mushrooms, and Onion; saute until tender yet still firm to the bite, about 8 minutes.
Add White Wine, bring to a boil. Stir in Garlic, Parsley, Salt, and Black and Red Peppers. Bring to boil and cook for a few minutes.
Add Shrimp, saute until Shrimp is opaque, about 2 to 3 minutes.
Stir in Lemon Juice. Cook and stir until heated through, 2 to 3 minutes.
