Sauteed Shrimp Asparagus and Mushrooms

Ingredients

  • 2 tbsp Butter, divided
  • 1 lb Asparagus, cut into 2-inch pieces
  • 2 cups sliced Mushrooms
  • 1 small Onion, sliced
  • 1 lb large Raw Shrimp, peeled and deveined
  • 2 cloves Garlic, minced
  • 1 tbsp Garlic Salt
  • 1 tbsp Dried Parsley
  • 1 tsp ground Black Pepper
  • 1/4 tsp Crushed Red Pepper
  • 1/2 cup Dry White Wine / Vermouth
  • 3 tbsp Lemon Juice

Directions

  1. Melt 1 tablespoon butter in a large skillet over medium heat. Add Asparagus, Mushrooms, and Onion; saute until tender yet still firm to the bite, about 8 minutes.
  2. Add White Wine, bring to a boil. Stir in Garlic, Parsley, Salt, and Black and Red Peppers. Bring to boil and cook for a few minutes.
  3. Add Shrimp, saute until Shrimp is opaque, about 2 to 3 minutes.
  4. Stir in Lemon Juice. Cook and stir until heated through, 2 to 3 minutes.
  5. Serve over White Rice.
